Shrimp & Pork Vietnamese Egg Rolls

Medium shrimp (peeled, deveined, and chopped)

chile garlic sauce
1 tablespoon
chopped scalions
1 cup
bean sprouts
1 cup
matchstick carrot strips
1 cup
packed cilantro leaves
1 cup
packed fresh mint leaves
spring roll wrappers
Canola Oil (for brushing)


1. Combine the sugar and warm water in a bowl and let the sugar dissolve. Combine the lime juice, fish sauce, and Thai chile to make the nuoc cham. Reserve the nuoc cham.

2. Place a wok or large saut. pan on the stove top. Heat the vegetable oil over medium-high heat. When the oil is hot, add the sausage and stir fry for 3 mins. Then, add the yellow onion and garlic and cook for 2 mins. Finally, add the bok choy and shrimp and stir fry for 1 min.

3. Season with the chile garlic sauce and 3 tbsp. nuoc cham. Reserve the rest of the nuoc cham.

4. Remove the wok/sauté pan from the heat and let cool completely. Then, stir in the scallion.

5. Combine the bean sprouts, carrots, cilantro, and mint and dress lightly with the nuoc cham. Reserve the salad and the rest of the nuoc cham.

6. Spread 2 tbsp. shrimp mixture in the bottom quarter of each spring roll wrapper. Fold two sides of the wrapper toward the center and then roll like a jelly roll, pressing the edges together to seal. Repeat until all 24 rolls are sealed. Brush the egg rolls with canola oil.

7. Evenly divide the egg rolls between the Crisper Tray and Baking Pan. Slide the Pizza Rack into Shelf Position 1. Place the Baking Pan on top

of the Pizza Rack. Slide the Crisper Tray into Shelf Position 2. Select the Airfry setting. Set the cooking temperature to 380° F and set the cooking time to 7 mins. Press the Start Button to begin the cooking cycle.

8. When the cooking time is complete, remove the egg rolls and drain them on paper towels. Repeat until all the egg rolls are cooked.

9. Serve with the nuoc cham (for dipping) and the carrot and herb salad.
