chopped bell peppers
1⁄2 cup
chopped celery

cubed boiled ham
Bay leaves
8 ounces
can whole tomatoes, chopped with juice
1 teaspoon
1⁄2 teaspoon
ground cayenne pepper
1⁄4 teaspoon
Freshly ground black pepper
1⁄4 teaspoon
dried thyme
1 cup
long-grain white rice
1 cup
shrimp or chicken stock
2 pounds
medium-sized shrimp, peeled & deveined
1 cup
chopped scallions


1. Place the Inner Pot in the Pressure AirFryer. Press the Sauté Button, scroll to the Vegetables setting, and press the Program Dial. Press the Program Dial again to confirm the default setting and begin the cooking cycle (340° F/170° C for 10 mins.). Add the vegetable oil and heat the oil for 1 min. Add the onions, bell peppers, celery, garlic, and ham and sauté for 8 mins. Add the bay leaves, tomatoes, salt, cayenne pepper, black pepper, thyme,  rice, and stock and stir to combine. Add the shrimp. Press the Cancel Button.

2. Place the Pressure Lid on the Pressure AirFryer and turn the Lid counterclockwise. The Lid will lock and the Pressure Release Valve  will close. Press the Pressure Button, scroll to the White Rice setting,  and press the Program Dial. Scroll to the Low setting and press the Program Dial to begin the cooking cycle (6-min. cooking time).

3. When the cooking process is complete, the Pressure AirFryer will automatically switch to Keep Warm. Press the Cancel Button. Let the Pressure AirFryer sit to naturally release pressure (about 20 mins.).  Then, slide the Steam Release Switch to the Open position. After the steam  is released, remove the Lid. Transfer the jambalaya to a platter and garnish with the scallions.
