Pumpkin Fries with Chipotle-Maple Sauce

1⁄2 cup
plain Greek yogurt
2 tablespoons
maple syrup
2 teaspoons
minced chipotle pepper in adobo sauce
1⁄8 teaspoon
plus 1/2 tsp. salt, divided
medium pie pumpkin
1⁄4 teaspoon
Garlic powder
1⁄4 teaspoon
Ground cumin
1⁄4 teaspoon
Chili powder
1⁄4 teaspoon


1. In a small bowl, combine yogurt, maple syrup, chipotle peppers and 1/8 tsp. salt. Refrigerate, covered, until serving.

2. Peel pumpkin; cut in half lengthwise; discard seeds or save for toasting. Cut into 1/2-in. strips. Transfer to a large bowl. Sprinkle with remaining
1/2 tsp. salt, garlic powder, cumin, chili powder and pepper; toss to coat.

3. Place tall wire rack into inner pot. Arrange pumpkin in a single layer on greased rack. Close air frying lid. Press air fry function; select vegetables setting. Press temp setting; set to 400°. Press timer; set to 6 minutes. Start. Turn pumpkin over. Air fry an additional 3 minutes or until browned and crisp. Repeat with remaining pumpkin. Serve with sauce.
