plain yogurt

pita pocket halves, warmed

plum tomatoes, sliced

Instructions

1. Press saute function; select pork setting. Press timer; set to 15 minutes. Start. Heat oil; brown lamb in batches. Remove lamb and keep warm. In drippings, saute onion until tender, 4-6 minutes. Add garlic and tomato paste; cook and stir 2 minutes. Stir in wine, oregano, basil, 1 tsp. salt, cumin and coriander. Add lamb; stir to coat. Press cancel.

2. Cover with glass lid. Press slow cook function; select pork setting. Set to medium cook time (8 hours). Start. Cook until lamb is tender.

3. Dice enough cucumber to measure 1 cup; thinly slice remaining cucumber. Combine diced cucumber with yogurt and remaining 1/4 tsp. salt. Fill pita halves with lamb mixture, tomatoes, sliced cucumbers and yogurt mixture.
