fresh chorizo, casings removed
large onion, chopped
poblano peppers, finely chopped
jalapeño peppers, seeded and finely chopped

Tomato paste
large sweet potatoes, peeled and cut into 1/2-in. cubes
4 cans
(14 oz. each) fire-roasted diced tomatoes, undrained
2 cans
(15 oz.) black beans, rinsed and drained
2 cups
beef stock
2 tablespoons
Chili powder
1 tablespoon
dried oregano
1 tablespoon
Ground coriander
1 tablespoon
Ground cumin
1 tablespoon
smoked paprika
1⁄4 cup
Lime juice
Optional toppings: chopped jalapeños, chopped red onion and crumbed queso fresco


1. Press saute function; select pork setting. Press timer; set to 15 minutes. Start. Cook and stir chorizo, onion, poblanos and jalapeños in inner pot until chorizo is cooked through. Press cancel. Drain; return chorizo mixture to inner pot.

2. Stir in tomato paste. Add potatoes, tomatoes, beans, stock and spices; stir to combine. Cover with glass lid. Press slow cook; select pork setting. Select short cook time (6 hours). Start. Cook until potatoes are tender.

3. Stir in lime juice. If desired, serve with optional toppings.
